Where does Vaya source vanilla?

We work closely with growers in the Veracruz region of Mexico. Specifically Papantla, which is the origin of vanilla for the world.

What’s in the bottle?

It’s pretty simple: organic cane alcohol (35%), water, and vanilla beans.

While the beans aren’t certified organic, they’re the closest thing to it.

Because this is a lightly filtered extract, there may be some naturally occurring sediment and vanilla seeds inside the bottle.

Does it go bad?

Given the high alcohol content to create and preserve this extract, it truly only improves with age. As food product safety goes, we’d advise to use it within 3 years, but it certainly won’t sit on the shelf that long.

Can I use this vanilla bean inside the bottle?

We really hope you do. That bean was added to the bottle to help the extract to continue to improve and develop more flavor. We encourage you to take it out if you’d like and scrape the caviar from the inside, use it in your cooking and baking where you’d like to see those gorgeous speckles.

You’re saying vanilla isn’t just intended for baking?

Our hope is to expand the use of vanilla as an ingredient. It currently exists inside the box of sweet treats and baking, and we’d like to see it being used in savory applications. It’s a potent, complex flavor that can really stand up to the test. Check out some of our recipes!
